Sharpening Angle Guide
Each sharpening angle affects the blade’s sharpness and durability. Here’s what the angles mean:
- 15° – Very sharp, ideal for Japanese knives. Fine edge but more fragile.
- 18° – Good balance of sharpness and strength. Great for high-end kitchen knives.
- 20° – Standard angle for Western kitchen knives. Durable and versatile.
- 22° – Strong edge for utility, hunting, or outdoor knives. Less sharp, very tough.
